The Peony Signature Mocktail

Serves 2-3

You'll need:

For the pear syrup:

  • 160 g finely chopped/blended pears. Dessert pears work best.

  • 100g caster sugar

  • 120 ml water

  • 60ml vanilla syrup

To create the mocktail:

  • 40 ml Alcohol-free Gin or Seedlip

  • 30 ml pear purée syrup (about 3 tablespoons)

  • 180 ml Soda Water

  • Crushed ice to top

Method:

First of all, you need to make the pear syrup. In a pan, add the pear, caster sugar, water and vanilla syrup and heat on a medium flame. Bring to the boil and then simmer until the liquid becomes an amber colour, about 5-8 mins. Stir frequently and allow the pears to break apart if you haven't blended in advance. Remove the puree from the heat and strain into a container.

Once the syrup has cooled, add the alcohol-free gin or Seedlip to a glass, with 2 tablespoons of the pear and vanilla syrup. Stir briskly and add the soda water. To finish, add crushed ice to the top and a thin slice of pear. You might like to also add a rim of caster sugar and cinnamon, or sugar and vanilla bean around the glass - it's a lovely addition!
